Skinny Tilapia Lettuce Wraps
Ingredients
- 3 lbs Tilapia fillets [ I used Costco frozen fillets ]
- 8 large Romaine leaves
- 1 Avocado, thinly sliced
- 1 Onion, diced
- 1 Serrano chile
- 2 Tbsp jalapeños, diced
- 2 cups diced tomatoes
- 1 tsp extra virgin olive oil
- 2 Tbsp garlic, minced
- 1/4 cup cilantro, chopped [ i sub. the "paste" version bc. its all i had on hand ]
- 1 lime, juiced
- S&P to taste
- Shredded purple cabbage
- Cucumbers
- Bell Peppers
- Any other toppings you fancy

Instructions
- Prep out all ingredients
- Heat olive oil in a skillet. Add onion and garlic.
- Add tilapia to skillet and cook through.
- Add both peppers, cilantro, tomatoes, lime juice and S&P. Cook for another 3-5 minutes.
- Arrange lettuce leaves on a platter. Spoon fish mixture (about 1/3) cup down the center of each leaf. Serve with thinly sliced avocado and any other optional toppings.
