Sweet Potato Pie
Prep Time: 30 mins
Cook Time: 1 hours 50 mins
Ready in : 2 hours and 20 min ( but I like to chill it overnight)
Servings: About 8
INGREDIENTS:
- 1 1lb Sweet potato
- 3/4 Cup sugar* ( I used homemade Vanilla sugar)
- 1/2 Cup Milk
- 1/2 Cup Butter (softened)
- 2 Eggs (room temperature)
- Ground Cinnamon (as much as you like)
- 1/2 Tsp Vanilla extract
- 1 (9 inch) unbaked pie crust
DIRECTIONS:
1. Wash sweet potatoes to remove all the dirt.
2. Boil sweet potatoes whole with skin on for 40 to 50 min, or until tender (the fork method**) Let cool***

Note: Pie will puff up like a souffle, and will sink down as it cools.

* To make vanilla sugar. Split a vanilla bean in half and cut into 1 inch pieces. Add to a
container of white sugar. Let sit for 2 to 3 days and shake occasionally to remove lumps.
I make this in advance in a big batch to have to use for anything from coffee to baked
goods.
** The fork method is sticking a fork into, in this case a potato, and if it goes in smooth
with no forcing, and comes out smooth the potato is ready to eat.
*** If you do not have time to cool the sweet potato, you can run it under cold water then
remove the skin and cut.
