Skinny Tilapia Lettuce Wraps




Ingredients
  • 3 lbs Tilapia fillets [ I used Costco frozen fillets ]
  • 8 large Romaine leaves
  • 1 Avocado, thinly sliced
  • 1 Onion, diced
  • 1 Serrano chile
  • 2 Tbsp jalapeños, diced
  • 2 cups diced tomatoes
  • 1 tsp extra virgin olive oil
  • 2 Tbsp garlic, minced
  • 1/4 cup cilantro, chopped [ i sub. the "paste" version bc. its all i had on hand ]
  • 1 lime, juiced
  • S&P to taste

  • Optional Toppings:
  • Shredded purple cabbage
  • Cucumbers
  • Bell Peppers
  • Any other toppings you fancy


Instructions
  1. Prep out all ingredients
  2. Heat olive oil in a skillet. Add onion and garlic.
  3. Add tilapia to skillet and cook through.
  4. Add both peppers, cilantro, tomatoes, lime juice and S&P. Cook for another 3-5 minutes.
  5. Arrange lettuce leaves on a platter. Spoon fish mixture (about 1/3) cup down the center of each leaf. Serve with thinly sliced avocado and any other optional toppings.
